Not only are salads a great side dish to meals, they are also packed with vitamins which help to build the immune system and protect against diseases. Vitamins found in salads particularly vegetable and fruits salad include vitamins A, B1, B2, C, E, potassium, folic acid, iron, dietary fibre, antioxidants, phytochemicals etc.

It takes about 10 minutes to prepare this recipe. Add as many fruits and vegetables as you desire. –


4 tablespoons olive oil (you can substitute with canola or soy bean oil)

2 tablespoons vinegar (preferably white wine vinegar)

1 tablespoon Dijon mustard

1/2 teaspoon salt

1/2 teaspoon ground black pepper

1 pinch white sugar

1 teaspoon chopped fresh parsley

1 teaspoon fresh lemon juice

2 cloves garlic, chopped

1 avocados (popularly called pear) – peeled, pitted, and cubed

4 cups mixed salad greens

1/2 cup sliced almonds

2 ounces feta cheese, crumbled (you can substitute with cheddar cheese)



In a large bowl, mix together the olive oil, vinegar, mustard, salt, pepper, sugar, parsley, lemon juice and garlic. Add the avocado, and stir to coat with the dressing.

Chill in the refrigerator for 20 minutes (optional)

Just before serving, add the salad greens, and toss to coat with dressing. Sprinkle sliced almonds and feta cheese on top.
